We’re not bluffin’ about these muffins! Light, fluffy and packed with protein, these Cottage Cheese Omelet Muffins made with Belfonte Cottage Cheese are easy to make and perfect for your mornings on the go. Plus you can mix up the toppings to fit your family’s taste.


1 cup Belfonte Cottage Cheese
4 eggs, lightly beaten
4 oz. ham, diced
½ cup cheddar cheese, shredded
¼ cup onions, diced
¼ cup green peppers
1 cup flour
1 tsp baking powder
¼ tsp. salt


Preheat oven to 400 degrees. In mixing bowl combine Belfonte Cottage Cheese, eggs, flour and baking soda until well mixed. Add in cheese, onions, green pepper, salt and ham and fold in gently. Scoop mixture into greased muffin tin, about 3/4 of each cup. Bake for 25-30 minutes and test with a toothpick to make sure the muffins are set.
