Creamy Ham and Potato Soup
Weekdays are busy, so we’ve got your dinner covered with Creamy Ham and Potato Soup. It’s hearty and simple: just toss the ingredients in the slow cooker before work and it will be ready and waiting for you when you get home.
16 oz of cubed ham
8 cups russet potatoes, peeled and diced
1 yellow onion, diced
2-3 carrots, peeled and diced
½ cup celery
1 tsp. salt
¼ tsp. black pepper
¼ cup flour
4 cups chicken broth
1-½ cups Belfonte Vitamin D Milk
½ cup Belfonte Sour Cream
Optional: cheddar cheese, green onions for toppings
Add ham, potatoes, carrots, celery, onion, salt, pepper and chicken broth to the slow cooker. Cook on low 7-8 hours or high 4-5 hours. For Instant Pot users: press soup/broth button or do manual pressure at 10 minutes, natural release.
Mash about half of the potatoes. Add flour, Belfonte Vitamin D Milk and Belfonte Sour Cream and stir.
Cover and cook on high for an additional 15 minutes.Instant Pot users: Press Saute button on Low for 10-15 minutes.
Serve with cheese, green onions and a dollop of Belfonte Sour Cream and enjoy!
