Getting back into the school routine can be tough, treat yourself! These Mini Brownie Sundaes are easy to make and a great way to end the first full week of the New Year!
1 box of your favorite brownie mix
1/2 cup milk chocolate chips
Belfonte Premium Vanilla Ice Cream
Magic shell chocolate syrup
Preheat oven to 375*. Spray mini muffin tin with baking spray and sprinkle flour into each cup to make sure the brownies don’t stick. Make brownie batter according to package, adding a 1/2 cup of chocolate chips once the batter is mixed. Divide brownie batter into mini muffin cups, about 3/4 full. Bake for 15-20 minutes or until a toothpick comes out fairly clean. Set on wire rack to cool.
Once brownies are at room temperature, press the centers of each brownie down to form a little bowl and begin to top the sundaes. Using a 2″ cookie scoop, scoop Belfonte Premium Vanilla Ice Cream onto the brownies, doing 5-6 at a time and then sticking the sundaes into the freezer to set. Repeat until all brownies are topped with ice cream. Next bring out the first sundaes and top with magic shell chocolate syrup. Stick back in the freezer and repeat with all the sundaes.
When you are ready to serve, top each sundae and add sprinkles. Enjoy!
