Mint Chocolate Chip Ice Cream Sandwiches
Ingredients
- Belfonte Green Mint Chip Ice Cream
- rainbow sprinkles (optional)
For Cookies
- 1 cup butter (2 sticks, softened)
- 1 cup brown sugar
- ½ cup sugar
- 2 eggs
- 1 tbsp vanilla extract
- 1 tbsp cornstarch
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- ½ cup cocoa powder
- 2 ½ cups flour
Directions
- Spread Belfonte Mint Chip Ice Cream evenly onto a small cookie sheet or baking dish lined with parchment paper, about ¾ inch thick.
- Place in freezer to refreeze until firm.
- Preheat oven to 350°F
- Line baking sheets with parchment paper.
- In a large mixing bowl, add softened butter, brown sugar, and sugar and mix until light and fluffy.
- Add eggs and vanilla and mix again until well combined.
- Add dry ingredients and stir until just combined.
- Scoop cookie dough into 1-inch balls onto parchment paper a couple inches apart.
- Bake in oven at 350°F for 8–10 minutes.
- Continue with all cookie dough and let cool.
- Remove ice cream from freezer. Use a cookie cutter the size of your baked cookie to cut out your ice cream rounds. (This will only work smoothly if your ice cream is very firm.)
- Add in between two of chocolate cookies and roll halfway in rainbow sprinkles.
- Continue with the rest of the cookies. Serve, share and enjoy!!!
Yields 10-12 ice cream sandwiches.
