Mint Chocolate Chip Ice Cream Sandwiches

Ingredients

For Cookies

  • 1 cup butter (2 sticks, softened)
  • 1 cup brown sugar
  • ½ cup sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 tbsp cornstarch
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ cup cocoa powder
  • 2 ½ cups flour

Directions

  1. Spread Belfonte Mint Chip Ice Cream evenly onto a small cookie sheet or baking dish lined with parchment paper, about ¾ inch thick.
  2. Place in freezer to refreeze until firm.
  3. Preheat oven to 350°F
  4. Line baking sheets with parchment paper.
  5. In a large mixing bowl, add softened butter, brown sugar, and sugar and mix until light and fluffy.
  6. Add eggs and vanilla and mix again until well combined.
  7. Add dry ingredients and stir until just combined.
  8. Scoop cookie dough into 1-inch balls onto parchment paper a couple inches apart.
  9. Bake in oven at 350°F for 8–10 minutes.
  10. Continue with all cookie dough and let cool.
  11. Remove ice cream from freezer. Use a cookie cutter the size of your baked cookie to cut out your ice cream rounds. (This will only work smoothly if your ice cream is very firm.)
  12. Add in between two of chocolate cookies and roll halfway in rainbow sprinkles.
  13. Continue with the rest of the cookies. Serve, share and enjoy!!!

Yields 10-12 ice cream sandwiches.
