Show Mom some love! No Mother’s Day Brunch is complete without a breakfast casserole! Our Baked Ham & Swiss Breakfast Casserole is easy to put together the night before so all you need to do is stick it in the oven for Mother’s Day. Made with Belfonte Heavy Whipping Cream, this casserole is a recipe the whole family will love!
6 medium croissants
1 cup Belfonte Heavy Whipping Cream
16 oz cooked ham, chopped
2 cups Swiss or Gruyere cheese, shredded
1 Tbsp honey
1 tsp mustard
1/2 tsp salt
1/2 tsp pepper
The night before Brunch: spray 9×13” glass baking dish with cooking spray. Cut croissants into 2” pieces and layer at the bottom of the baking dish. Sprinkle with ham and cheese. In large bowl whisk eggs, Belfonte Heavy Whipping Cream, honey, mustard, salt and pepper. Pour egg mixture over croissants evenly, making sure each piece is completely covered. Cover with foil and refrigerate overnight.
The next morning: Preheat oven to 325 degrees. Bake covered for 35 minutes and then uncover and bake for 25-30 minutes or until knife inserted comes out clean. Let stand for 5-10 minutes before serving.
