Chocolate Milk Oatmeal Energy Bites

Ingredients

  • 1 ½ cups Old-Fashioned Rolled Oats
  • ½ cup Ground Flax Seed
  • ½ tsp. Salt
  • 2 tbsp. Protein Powder
  • ½ cup Creamy Peanut Butter
  • ⅓ cup Belfonte Chocolate Milk
  • 2 tbsp. Honey or Maple Syrup
  • 2 tbsp. Mini Chocolate Chips

Directions

  1. In a medium bowl, stir together the oats, ground flaxseed, salt, and protein powder together until well combined. Set aside
  2. In a separate bowl or glass measuring cup, whisk together the peanut butter, chocolate milk, and honey (or maple syrup) until smooth.
  3. Pour the wet ingredients over the dry ingredients and stir until fully combined. Fold in the mini chocolate chips.
  4. Cover and refrigerate for about 15 minutes, or until the mixture firms up slightly.
  5. Use a tablespoon or cookie scoop to portion out the mixture into roughly 1 ½-tablespoon portions, then roll into balls.
  6. Enjoy immediately, or store in an airtight container in the refrigerator for up to one week.

Notes:

  • Wet your hands before rolling the balls to prevent sticking.
  • If you can’t find ground flaxseed, grind whole flax seeds in a coffee grinder before using.
  • Creamy or crunchy peanut butter will both work!
  • To freeze, place the bites on a parchment-lined baking sheet and freeze for about two hours. Transfer the frozen bites to a freezer-safe zip-top bag and freeze for up to three months. Thaw before eating.
