Chocolate Milk Oatmeal Energy Bites
Ingredients
- 1 ½ cups Old-Fashioned Rolled Oats
- ½ cup Ground Flax Seed
- ½ tsp. Salt
- 2 tbsp. Protein Powder
- ½ cup Creamy Peanut Butter
- ⅓ cup Belfonte Chocolate Milk
- 2 tbsp. Honey or Maple Syrup
- 2 tbsp. Mini Chocolate Chips
Directions
- In a medium bowl, stir together the oats, ground flaxseed, salt, and protein powder together until well combined. Set aside
- In a separate bowl or glass measuring cup, whisk together the peanut butter, chocolate milk, and honey (or maple syrup) until smooth.
- Pour the wet ingredients over the dry ingredients and stir until fully combined. Fold in the mini chocolate chips.
- Cover and refrigerate for about 15 minutes, or until the mixture firms up slightly.
- Use a tablespoon or cookie scoop to portion out the mixture into roughly 1 ½-tablespoon portions, then roll into balls.
- Enjoy immediately, or store in an airtight container in the refrigerator for up to one week.
Notes:
- Wet your hands before rolling the balls to prevent sticking.
- If you can’t find ground flaxseed, grind whole flax seeds in a coffee grinder before using.
- Creamy or crunchy peanut butter will both work!
- To freeze, place the bites on a parchment-lined baking sheet and freeze for about two hours. Transfer the frozen bites to a freezer-safe zip-top bag and freeze for up to three months. Thaw before eating.
