Chocolate Mint Cookie Ice Cream Sandwiches


  • 1 cup butter 2 sticks, unsalted, browned
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • 6 peppermint leaves (finely chopped)
  • 2 1/2 cups flour
  • 1/3 cup cocoa powder
  • 1 tbsp cornstarch
  • 1 1/2 tsp baking soda
  • 3/4 tsp salt
  • Belfonte Vanilla Ice Cream


  1. Preheat your oven to 350° F and line your baking sheets with parchment paper.
  2. In a large bowl, add your browned butter, brown sugar, and sugar and whisk until well combined.
  3. Add your eggs, peppermint extract, and vanilla extract and mix until light and fluffy.
  4. Add your chopped peppermint leaves, flour, cocoa powder, cornstarch, baking soda and salt. Fold until just combined.
  5. On the flowered surface, roll out your cookie dough and cut them into circles using a round cookie color or biscuit color.
  6. Place your baking sheets, lined with parchment paper and bake for 8 to 10 minutes. Remove from oven and let cool.
  7. Once your cookies have cooled, scoop out your Belfonte vanilla ice cream and place in between two cookies.
  8. Continue with the rest of your cookies and ice cream until all of them are filled.
  9. If you’d like, you can dip them in chocolate, or add sprinkles on the edges.
  10. Share and enjoy!!
