Chocolate Peppermint Cookie Bars
Ingredients
For Cookie Bars
- ½ cup butter (1 stick, melted)
- ½ cup sugar
- ¼ cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- ½ tsp peppermint extract
- ½ tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 ¼ cups all purpose flour
- 2-3 tbsp cocoa powder
For Frosting
- ½ cup butter (1 stick, softened)
- 3-4 cups powdered sugar
- 1 tsp pure vanilla extract
- 2-3 tbsp Belfonte Heavy Whipping Cream
- Crushed peppermint candy to sprinkle on top
Directions
For Cookie Bars
- Pre-heat your oven to 350°F and line you 9 by 9 inch baking dish with parchment paper.
- In a large bowl, add your butter and sugars and mix until combined.
- Add your egg and extracts and mix until light and fluffy.
- Add your dry ingredients including your baking soda, baking powder, salt, flour and cocoa powder. Stir until just combined and dough is formed.
- In a 9 by 9 inch baking dish, add your dough and spread it out evenly.
- Bake in the oven at 350° F for 10-12 minutes until set.
- Remove from oven and let cool.
For Frosting
- In a large bowl of a stand mixer or using a hand mixer, add your butter and whip until fluffy and lightens in color. Add your powdered sugar and pure vanilla extract and mix.
- Slowly add your Belfonte Heavy Whipping Cream and mix until light and fluffy.
Assemble
- Once your cookie bars have cooled, remove from the pan using the parchment paper.
- Swirl your white frosting on your cookie bars until it looks how you desire. I like to use an off set spatula for this.
- Sprinkle with your crushed peppermint pieces.
- Cut into bars, serve and enjoy!!
