Cottage Cheese Alfredo

Lighten up! Cut the calories but not the flavor of one of your favorite pasta indulgences. Our Cottage Cheese Alfredo made with Belfonte Cottage Cheese and Belfonte Vitamin D Milk is rich, creamy and delicious.

Ingredients:

1 cup Belfonte Vitamin D Milk

½ cup Belfonte Cottage Cheese

1 Tbsp cornstarch

¼ tsp garlic powder

¼ tsp salt

1/8 tsp pepper

½ cup freshly grated Parmesan cheese

Fresh parsley to taste

½ pound of your favorite pasta

 

Directions:

In food processor or blender, add all ingredients except parsley and blend until smooth. Pour mixture in large saucepan and cook on medium-low heat until smooth and heated thoroughly. While sauce is heating up, boil water and cook pasta as recommended on box. Reserve ½ cup of water from the pasta. Add cooked pasta to the sauce slowly and add pasta water as needed to keep the sauce smooth. Serve with fresh parsley.
