Cottage Cheese Banana Bread

Ingredients

  • 2 very ripe bananas (about 1 cup mashed)
  • 2 large eggs
  • ½ cup Belfonte 4% Large Curd Cottage Cheese
  • ⅓ cup granulated sugar
  • 2 tbsp. maple syrup
  • 1 ½ tsp. vanilla extract
  • 1 ¾ cup all-purpose flour
  • 1 ½ tsp. baking soda
  • 1 ½ tsp. cornstarch
  • 2 tsp. ground cinnamon
  • ½ tsp. ground ginger
  • ½ tsp. salt
  • ⅓ cup mini chocolate chips

Directions

  1. Preheat the oven to 350º F. Grease a standard 9×5” loaf pan or line it with parchment paper. Set aside.
  2. In a large mixing bowl, mash the bananas until mostly smooth.
  3. In a blender or food processor, blend the Belfonte 4% Large Curd Cottage Cheese and eggs together until completely smooth and creamy. Pour the cottage cheese mixture into the mixing bowl with the mashed bananas and stir until well combined.
  4. Add the sugar, maple syrup, and vanilla extract. Stir until fully blended.
  5. Add the flour, baking soda, cornstarch, cinnamon, ginger, and salt. Stir until about halfway combined (several streaks of flour should still be visible). Add the chocolate chips, then continue stirring until just combined, and no streaks of flour remain.
  6. Transfer the batter to the prepared loaf pan and smooth the top. Bake for 45-55 minutes, or until a toothpick inserted in the center comes out mostly clean with a few crumbs. Note: If the top of the bread begins to brown too quickly, loosely cover it with foil halfway through baking.
  7. Let the banana bread cool for about 15 minutes, then transfer it to a wire rack to cool for another 15-20 minutes before slicing and serving.
