Cottage Cheese Chocolate Mousse

Ingredients

  • 1 cup Belfonte 4% Small Curd Cottage Cheese
  • ¼ cup milk chocolate chips, melted
  • 2 tbsp. maple syrup
  • 2 tbsp. unsweetened cocoa powder
  • ½ tsp. vanilla extract
  • ¼ tsp. kosher salt
  • Dark chocolate bar, for topping
  • 2-3 strawberries, sliced, for topping

Directions

  1. In a blender, blend the Belfonte 4% Small Curd Cottage Cheese for about 60 seconds, until smooth and creamy.
  2. Melt the chocolate chips on the stovetop in a small saucepan over low heat, or in a microwave-safe measuring cup in 20 second intervals, stirring in between each, until smooth.
  3. Add the melted chocolate, maple syrup, cocoa powder, vanilla extract, and salt to the blender with the cottage cheese.
  4. Blend for another 30-60 seconds until smooth.
  5. Divide the mousse between two chilled glasses. Cover and refrigerate for at least one hour to set.
  6. Before serving, top with shaved dark chocolate and sliced strawberries.
  7. Serve chilled and enjoy!
