Cottage Cheese Chocolate Mousse
Ingredients
- 1 cup Belfonte 4% Small Curd Cottage Cheese
- ¼ cup milk chocolate chips, melted
- 2 tbsp. maple syrup
- 2 tbsp. unsweetened cocoa powder
- ½ tsp. vanilla extract
- ¼ tsp. kosher salt
- Dark chocolate bar, for topping
- 2-3 strawberries, sliced, for topping
Directions
- In a blender, blend the Belfonte 4% Small Curd Cottage Cheese for about 60 seconds, until smooth and creamy.
- Melt the chocolate chips on the stovetop in a small saucepan over low heat, or in a microwave-safe measuring cup in 20 second intervals, stirring in between each, until smooth.
- Add the melted chocolate, maple syrup, cocoa powder, vanilla extract, and salt to the blender with the cottage cheese.
- Blend for another 30-60 seconds until smooth.
- Divide the mousse between two chilled glasses. Cover and refrigerate for at least one hour to set.
- Before serving, top with shaved dark chocolate and sliced strawberries.
- Serve chilled and enjoy!
