Creamy Bacon Broccoli
Show Broccoli a little love! If you are having trouble getting your kids to eat their greens, our Creamy Bacon Broccoli side will have them asking for seconds. Made with Belfonte Heavy Whipping Cream, this side has a delicious flavor that even the pickiest eaters will love.
8 oz bacon
2 Tbsp butter
1 onion, diced
1 pound broccoli, chopped to desired size
1-1/2 cups Belfonte Heavy Whipping Cream
1 tsp cornstarch
1/2 cup shredded mozzarella cheese
1/3 cup grated parmesan cheese
Salt & Pepper, to taste
In large oven-safe skillet, fry bacon until crispy. Remove from pan and set aside. Drain some of the bacon grease, leaving 1-2 Tbsp in pan. Add onion and butter to the pan and cook until transparent. Add broccoli, season with salt and pepper and cook for 2-3 minutes or until broccoli turns bright green. Add garlic and cook for 30 seconds, stirring continuously. Add Belfonte Heavy Whipping Cream and reduce heat to low, letting it simmer for 4-5 minutes. Add a slurry of cornstarch and water to thicken if desired. Crumble bacon and add to the pan, stirring. Sprinkle both cheeses on the pan and stick under broiler for 2-3 minutes or until slightly browned and cheese melted. Carefully remove from the oven and serve.
