French Onion Dip Mashed Potatoes

Ingredients

  • 3 lbs. Yukon gold potatoes
  • 1 tbsp. Kosher Salt, plus more to taste
  • 4 tbsp. Unsalted Butter, softened
  • ½ cup Belfonte Half and Half, warmed
  • ⅓ cup Belfonte French Onion Dip
  • Black Pepper, optional, to taste
  • ¼ cup finely chopped chives, optional, for serving
  • ½ cup crushed French Fried Onions, optional, for serving

Directions

  1. Wash and peel the potatoes, then cut them into 1” pieces.
  2. Transfer potatoes to a large pot and fill with cold water, covering them by about 1”. Add 1 tbsp. kosher salt, then bring the pot to a boil.
  3. Boil for about 12-15 minutes, or until the potatoes are tender and a fork can easily pierce them. Drain well, then return the potatoes to the hot pot. Let them steam for about 1 minute to release excess moisture.
  4. Add a big pinch of salt and softened butter to the potatoes. Mash the potatoes directly in the pot until mostly smooth.
  5. Slowly stir in warmed Belfonte Half and Half, followed by the Belfonte French Onion Dip. Taste and season with more salt and pepper as needed.
  6. Transfer the mashed potatoes to a serving bowl and top with chives and crushed French fried onions. Serve warm and enjoy!

Notes

  • For the creamiest texture, run the drained potatoes through a potato ricer, then return them to the hot pot and stir in remaining ingredients.
  • Feel free to add more Belfonte French Onion Dip for even more onion flavor!
  • Warm the Belfonte Half and Half while the potatoes boil by gently heating it in a small saucepan over “low” heat, stirring occasionally, until warmed. You can also microwave it in a glass measuring cup for about 20 seconds, or until warmed through.
