A taste of summer! Our Fresh Strawberry Yogurt Muffins are packed with fresh picked strawberry flavor. Made with Belfonte Strawberry Yogurt and Belfonte Vitamin D Milk, these muffins are the perfect way to kick off your summer!
1/3 cup Belfonte Vitamin D Milk
1 large egg
2/3 cup white sugar
1/2 cup coconut oil
1 tsp vanilla extract
1-1/4 cups flour
1 tsp baking powder
1/4 tsp salt
1/2 cup Belfonte Strawberry Yogurt
1 cup fresh strawberries, chopped
Preheat oven to 375 degrees. Add muffin liners in muffin pan and lightly spray with baking spray to make sure muffins don’t stick. Mix Belfonte Vitamin D Milk, egg, sugar, coconut oil and vanilla in mixer until well combined. Add flour, baking powder and salt slowly until well combined, no lumps but don’t over mix. Fold in Belfonte Strawberry Yogurt until well distributed and then gently fold in fresh strawberries. Fill muffin liners with mixture 3/4 of the way, or more for larger muffins. Sprinkle with sugar. Bake for 25 minutes or until an inserted toothpick comes out clean. Serve warm or seal in container while still warm to preserve freshness.
