Go Green! Get ready St. Patrick’s Day with these easy Green Eggs & Ham Muffins made with Belfonte Cottage Cheese. The kids will love them, they are packed with protein and are sure to get everyone in the festive spirit. Don’t forget to pack them for the parade!

Ingredients:

5 eggs
1 cup Belfonte Cottage Cheese
1 cup diced ham
1/2 cup shredded cheese
1/2 cup green pepper
1/2 cup onion, diced
Salt & pepper to taste
Green food coloring, optional

Directions:

Heat oven to 325*. Whisk eggs and add Belfonte Cottage Cheese and the rest of the ingredients. Add green food coloring a few drops at a time for desired color. Spray muffin tin with cooking spray. Add a 1/4 cup of mixture to each muffin cup. Bake in the oven for 30 minutes or until muffins set. Let cool for 5-10 minutes and serve.
