Ingredients:

2 Tbsp olive oil
1 large onion, chopped
4 garlic cloves, minced
4 cups chicken broth
2 Tbsp fresh cilantro
1 Tbsp cumin
1/2 tsp oregano
2 lbs shredded leftover turkey
3 (15 oz) cans white beans, don’t drain
1 (15 oz) can corn
1 cup Belfonte Heavy Whipping Cream
3 Tbsp corn starch
Salt and pepper, to taste
Belfonte Sour Cream

Directions:

In large pot, saute onion in olive oil until translucent. Add garlic and saute for 30 seconds. Pour in chicken broth, chilies, spices and cilantro and bring to boil. Reduce heat and simmer for 10 minutes. Add shredded turkey, corn and beans. Simmer for 5 minutes. In small bowl add cornstarch and half of the Belfonte Heavy Whipping Cream and stir until smooth. Pour into pot and add the rest of the Belfonte Heavy Whipping Cream. Simmer for 10 minutes. Serve with Belfonte Sour Cream.
