Mini Super Skins
Get game day ready! These Mini Super Skins will have your whole party cheering during the big game. Topped with Belfonte Sour Cream, these easy apps will be devoured by half time.
12 mini potatoes, washed
1/4 cup olive oil
Salt and pepper
1/2 pound bacon, cooked and chopped (or bacon bits)
1 cup shredded cheese, cheddar or colby jack
1/4 – 1/2 cup Belfonte Sour Cream
Green onions, sliced
Preheat oven to 425*. In large bowl, drizzle olive oil over potatoes, coating them thoroughly. Sprinkle potatoes with salt and pepper. Place potatoes on baking sheet and bake for 35-40 minutes. Remove and let cool for 10 minutes. Slice potatoes in half and scoop out some of the insides, leaving a shallow bowl in each slice. Place potatoes face down on baking sheet and drizzle with olive oil. Bake for 10 minutes, then flip potatoes over and bake for another 10 minutes. Remove from oven and sprinkle with cheese and bacon. Broil in the oven until cheese melts. Remove and top with Belfonte Sour Cram and onions. Serve to your hungry fans!
